Crispy Chicken Goujons with Herby Mayo Dip
For this recipe, we’ve collaborated with the fantastic Rooted Spices, who have a range of beautifully packaged single-origin spices, perfect for adding a flavour explosion to even the most simple dish (see co-founder Rachel’s garlic spaghetti here).
The fresh and flavourful Za’atar combined with our creamy Classic Mayonnaise makes for an unbelievably moreish dip, ideal for these homemade baked chicken goujons.
Ingredients
4 boneless and skinless chicken breasts, cut into thick strips
2 large eggs, beaten well
50g plain flour
125g breadcrumbs
1 teaspoon cayenne pepper
½ teaspoon turmeric
salt and pepper, to taste
Method
Preheat the oven to 190 degrees and line a baking tray with a sheet of greaseproof paper.
Mix the breadcrumbs, cayenne pepper, turmeric and salt and pepper in a shallow bowl. Place the flour in another shallow bowl.
Dip the chicken pieces into the flour, then into the beaten egg, then coat in the seasoned breadcrumbs.
Lay the chicken goujons onto the baking tray and drizzle with a light coating of olive oil. Bake in the oven for 30-35 minutes, turning once.
In the meantime, make the herby mayo. Mix 3-4 tablespoons Dr Will’s Classic Mayonnaise in a bowl and add a good pinch of Rooted Za’atar.
Serve the chicken whilst it’s piping hot with the wonderfully herby Za’atar mayonnaise for dipping.
