Sriracha Mac & Cheese Cups

Dr. Will's Party Snack Series: Sriracha Mac & Cheese Cups - the perfect cheesy spicy bites! Makes 12 standard cupcake-sized cups & 24 mini cups.

INGREDIENTS:

  • 50g butter

  • 100g flour

  • 100ml milk

  • 250g macaroni pasta

  • 125g cheddar cheese

  • 1 egg

  • 1 tbsp sriracha

  • 100g cream crackers, crushed to breadcrumbs

METHOD:

  1. Preheat oven to 180C. Grease a cupcake tray with a little oil.

  2. Add your macaroni pasta to a pan of boiling water and cook as per cooking instructions.

  3. In another pan, make a roux. Starting by melting the butter in the pan and add a spoonful of flour at a time continuously stirring until it becomes a breadcrumb like texture. Then add a splash of mix at a time, continuing to stir until you make a thick paste, then add cheese.

  4. Then drain your cooked pasta and add to your cheese mix pan. Stir until well combined.

  5. Add an egg & sriracha hot sauce to the pan and keep stirring. Add a little bit of your mix to each of the spaces on your oiled cupcake tray. Top off each cup with breadcrumb crackers.

  6. Bake for 15-20 minutes or until tops are golden.
